In Chinese-Jamaican families, the best recipes are kept under lock and key. At Jamrock Cuisine, 65-year-old patriarch Maurice Chang uses culinary lessons learned from his Chinese father and Jamaican mother to make magic behind the line. “I had the best of both worlds,” he says. Today he has no problem producing either a plate of unctuous oxtails cloaked in velvety brown gravy or goat with lime leaf alongside his wife Marcia and daughter Shereena at the family-run, eight-seat restaurant.
